かつて鋳鉄製のポルチコ(前廊)の下で紳士たちがジンやウイスキーをチビチビと嗜みながら、若い女性たちを眺める光景をよく目にしました。しばしばテーブルをつなげて使用していたことから、長いバーカウンターが発案され、現在にも受け継がれています。

海南島出身のバーテンダー、ニャム・トン・ブーン(Ngiam Tong Boon)が考案したシンガポールスリングは、女性らしいおしゃれなピンク色の鮮やかなカクテルであったことから、女性の飲み物として社会的に受け入れられ、今でもその人気を保っています。
